Ivano's Italiano, the Italian takeaway at 11 Whitesands in Dumfries, is a chip shop too: fish suppers, haggis, black and white pudding, king rib and chips, all fried in beef dripping. It has long had what our old website called "a full and traditional fish and chips menu" next to the pizza and pasta. Here's what's on the fryer menu, what some of the Scottish names mean, and what to know if you have an allergy.

Fried in beef dripping
Our fryers use beef dripping, the way many Scottish chip shops always have. It's what gives traditional chips and batter their flavour.
It also means nothing from our fryers is suitable for vegetarians or vegans: not the chips, not the onion rings, not the panzanelle. Our vegan and vegetarian guide has the dishes that are.

Back in 2014, our website put it like this: Ivano's famous fish and chips are made with "REAL homemade chips using the best quality potatoes available", and "Ivano creates a beautiful crispy batter by using 2 different types of flour."
Single or supper?
In Scotland, a supper is anything from the fryer served with chips: a fish supper, a haggis supper, a sausage supper. On our menu every fryer item is listed as a single, and you make it a supper by adding large or small chips when you order. Depending on the item, you can also add salt and vinegar, a sauce (curry, cheese, Bolognese or tomato) or cheese on top.

New to Scottish chip shop food?
If you're visiting Dumfries, or just haven't met these before, here are the general descriptions you'd get in any Scottish chip shop. Our allergens page has the details of ours.
- Haggis is a savoury mix of sheep's offal, oatmeal, onion and spices. Spicy haggis has extra pepper and heat.
- Black pudding is a sausage made with blood, fat and oats or barley.
- White pudding is similar but without the blood: mostly oatmeal, fat and onion.
- King rib is seasoned minced pork pressed into the shape of a rack of ribs, then fried.

Allergies: our fryers are shared
Everything on the fryer menu is cooked in fryers shared with battered fish and with gluten-coated food. That matters most for two groups:
- If you're coeliac or avoid gluten: our chips have no gluten in them as ingredients, but they're fried with battered food, so our allergen table marks them may contain gluten and fish. That's why chips from a shared fryer aren't suitable for people with coeliac disease.
- If you have a fish allergy: everything from our fryers may contain fish.
The haggis, both puddings and the king rib contain gluten, and the fish contains fish and gluten from the batter. Please tell us about any allergy before you order.

Once we reopen, we're open Thursday to Sunday, 4pm to 10pm, at 11 Whitesands, Dumfries DG1 2RR. Order for collection, or for delivery with our own drivers up to about four miles from the shop: see where we deliver.
