Haggis pizza, haggis lasagne and haggis suppers: Scotland meets Italy in Dumfries

Ivano's Italiano, the Italian takeaway at 11 Whitesands in Dumfries, puts haggis on two pizzas and in a homemade lasagne, and fries it for haggis suppers. Haggis pizza and haggis lasagne were already on our menu in 2012, next to Ivano's Tuscan cooking. Here's every way haggis turns up on our menu, and what to know before you order.

First, what is haggis?

For anyone new to it, this is the general description you'd get anywhere in Scotland: haggis is a savoury pudding of sheep's offal, oatmeal, onion and spices, with a rich, peppery, crumbly texture. Spicy haggis has extra pepper and heat. The oatmeal matters if you avoid gluten: see the allergy section below.

Haggis Pizza

Our Haggis Pizza is one of our classics: pomodoro (tomato) and grated Italian mozzarella, topped with sliced spicy haggis, on our Romana-style thin crust. It comes in 10-inch and 12-inch.

The thin, crisp base works well with something as rich as haggis: you get the haggis and the cheese, not a mouthful of dough. If you're curious about the style, our article on Romana thin-crust pizza explains it.

Pizza Al Scozzese

Scozzese is Italian for Scottish. Our Pizza Al Scozzese brings together pepperoni, haggis and a drizzle of infused honey on tomato and mozzarella: sweet, spicy and savoury at once. It comes in 12-inch.

If you've never had honey on a pizza, this is the one to try it on.

Add haggis to your own

Haggis is one of the meat add-ons on every pizza and pasta dish on our menu:

• Add it to a classic pizza, such as a Margherita or a Salsiccia & Cippola.
• Build your own around it, on one of our plain 12-inch bases: haggis with red onions and chilli flakes, say, or haggis with smoked sausage.
• Add it to a pasta dish: a Bolognese with haggis and a little cheddar is a quick cousin of our haggis lasagne.

Homemade Haggis Lasagne

Our Homemade Haggis Lasagne is layers of Bolognese and haggis with a creamy béchamel sauce, topped with cheddar. It sits next to our classic Homemade Lasagne (Bolognese, béchamel and grated cheddar), and over the years it's been one of the dishes customers have named in their reviews.

Haggis from the fryer

Our chip shop menu has haggis and spicy haggis, sold as singles. Add small or large chips to make it a haggis supper, then salt and vinegar, curry sauce or cheese sauce if you like. Our fryers use beef dripping, so everything from the fryer, chips included, is unsuitable for vegetarians and vegans.

Burns Night

Burns Night is 25 January, and it means a lot in Dumfries and Galloway: Robert Burns spent the last years of his life in Dumfries, and he's buried in the town. Once we've reopened, our nights are Thursday to Sunday, so if Burns Night falls early in the week, a haggis pizza on the weekend nearest to it is the way to join in.

Allergies: haggis contains gluten

Haggis is made with oats or barley, so every haggis dish contains gluten. Our allergen table also marks haggis may contain celery and sulphites. In full:

Haggis contains meat, so none of these dishes is vegetarian, and there's no vegetarian haggis on our menu. The full table is on our allergens page.
