Dips and sides at Ivano's, Dumfries: garlic mayo, Dynamite, curry sauce and more

Ivano's Italiano, the Italian takeaway at 11 Whitesands in Dumfries, has ten dips, from garlic mayonnaise to the fiery Dynamite, plus sides such as chips, onion rings, garlic mushrooms and mushy peas. This guide explains what each one is, what goes with what, and the allergy and diet points worth knowing before you order.

A thin pizza crust, a box of panzanelle or a portion of chips all need something to dip them in, and a side or two turns one dish into a proper takeaway night.

The dips

The pairings are only ideas. Plenty of people dip their pizza crusts in curry sauce, and we won't stop you.

Our older menus sold panzanelle two ways: with a garlic mayonnaise dip, or with a spicy one. Both still work. Our article on focaccia, calzone and panzanelle explains what panzanelle are.

• The calzone has a big crust for dipping: add an Arrabbiata, garlic mayonnaise or Spicy Marie Rose when you order.
• For dessert, there's a Nutella chocolate dipping sauce to go with the sweet panzanelle.

Over your chips

Chips are where Scotland meets our dips. When you order chips, or a supper from the fryer, you can add tomato sauce, curry sauce, our formaggio (cheese) sauce or our Bolognese sauce, put cheddar, mozzarella or parmesan on top, and finish with salt and vinegar. Chips with cheese, chips with curry sauce, or chips with Bolognese and cheese: the choice is yours.

There's also a plain focaccia with olive oil, and the Special Focaccia adds mozzarella. Our 2014 website called the chips "REAL homemade chips using the best quality potatoes available". On our menu, the chips, onion rings, nuggets and panzanelle are with the fryers, and the rest are under side dishes.

Vegetarian and vegan: the fryer matters

Our fryers use beef dripping. That means nothing from the fryer is suitable for vegetarians or vegans: not the chips, the onion rings, the chicken nuggets, or the panzanelle, sweet or savoury.

Among the dips, four are marked vegan on our menu: the Arrabbiata, Dynamite, BBQ Tomato Chilli and Sweet Chilli and Garlic. The Garlic Mayonnaise and Spicy Marie Rose are marked vegetarian, and both contain egg. The garlic focaccia, which is baked rather than fried, is marked vegan. Our allergen table lists every dip and side. The ones people most often ask about:

"None marked" means our table shows nothing for that column, but everything is made in one small, shared kitchen. Add dips and sides when you order at ivanos.uk. Once we reopen, Thursday to Sunday, 4pm to 10pm, we deliver across most of Dumfries and you can collect from 11 Whitesands, DG1 2RR.
