A guide to our pasta dishes in Dumfries, from Arrabbiata to Boscaiola

Ivano's Italiano, the Italian takeaway at 11 Whitesands in Dumfries, makes more than thirty pasta dishes, built on five sauces: Arrabbiata, Bolognese, Imperiale, Al Creama and Formaggio. This guide groups them by sauce so you can find your way around, from a simple Arrabbiata to the creamy Boscaiola.

Pasta has been at the heart of Ivano's since the start. Our first website, back in 2009, already had a menu section called Pasta Pronta, Italian for "ready pasta", and the name stayed on our menus for years. If an Italian name is new to you, our guide to the Italian words on our menu explains it.

It follows the pasta list on our menu page, which comes from our last full menu, so a dish or two may change when we reopen.

First, choose your pasta

Most dishes come with penne or spaghetti. Tagliatelle, the long flat ribbons, is available for a small extra charge.

If you're coeliac

What we can't promise is a completely gluten-free environment: the same kitchen makes fresh pasta and handles wheat flour every night, and some sauces and toppings carry gluten of their own. That's why our allergen table keeps a "may contain gluten" ring on the gluten-free penne dishes. Please check the dish on our allergens page and ask us before you order. The five sauces everything starts from

Nearly every dish on the list begins with one of five sauces. If you know these, you know the menu.

  • Arrabbiata

    Tomato, garlic, chilli flakes and Italian herbs. Rich, a little spicy, and the base for most of the tomato dishes. (Spelt Arrabiatta on our menu.)

  • Bolognese

    Our homemade, meaty tomato sauce, the Tuscan way.

  • Imperiale

    Arrabbiata finished with fresh double cream and a hint of chilli: halfway between tomato and cream.

  • Al Creama

    Fresh double cream, white wine and a hint of garlic.

  • Formaggio

    Our homemade cheese sauce.

Tomato dishes

Built on arrabbiata or plain pomodoro, these are the lighter end of the menu:

  • Arrabbiata on its own, or with Pollo (chicken), Funghi Piccante (garlic mushrooms) or Al Tonno (tuna).
  • Amatriciana: tomato, chilli and smoked ham.
  • Al Ivanos: arrabbiata with smoked sausage and a touch of chilli.
  • Vegetariana: mushrooms, onions, sweetcorn and roasted peppers.
  • Diavola, our "She Devil": pepperoni, chilli flakes and jalapeños in a fiery sauce.
  • Marinara: prawns and mussels with a hint of chilli, and Gamberetti Chilli with prawns alone. Our guide to seafood at Ivano's has them all.
  • Speciale Al Pomodoro: chicken, smoked sausage, pancetta and mushrooms in tomato sauce.

Bolognese dishes

  • Bolognese: the classic.
  • Cardinale: Bolognese finished with fresh cream.
  • Bolognese Bomba: Bolognese with pepperoni and jalapeños, topped with cheddar.

Imperiale dishes

For people who can't decide between tomato and cream. The Imperiale comes plain, with chicken (Pollo Imperiali), with prawns (Imperiale Gamberetti), with vegetables (Imperiale Vegetariana), or as the Speciale Imperiale with chicken, smoked sausage, mushrooms and ribbons of ham. Pancetta and Affumicata are close cousins: tomato and cream with bacon and ham, or with smoked sausage.

Creamy dishes

  • Carbonara: the creamy kind, with fresh double cream, pancetta and ribbons of ham.
  • Boscaiola: a creamy mushroom sauce with smoked bacon and ham.
  • Campagnola: cream, chicken and mushrooms.
  • Funghetto: a creamy mushroom sauce with white wine.
  • Al Creama: the cream and white wine sauce on its own.
  • Speciale: the full works, with chicken, mushrooms, smoked sausage, pancetta and ham in a creamy white wine sauce.

Cheese dishes

  • Quattro Formaggi: four cheeses (gorgonzola, cheddar, parmesan and mascarpone) in a creamy sauce, also made with smoked sausage, ham or chicken.
  • Pollo Formaggio, Formaggio Pancetta and Formaggio Diavola (with pepperoni and jalapeños), all in our creamy cheese sauce.
  • Macaroni Cheese: pasta in our homemade cheese sauce. Simple and comforting.

Homemade lasagne

Two baked dishes, both made in our kitchen:

  • Homemade Lasagne: layers of Bolognese and béchamel, topped with grated cheddar.
  • Homemade Haggis Lasagne: layers of Bolognese and haggis with a creamy béchamel, topped with cheddar.

Customers' favourites

Over the years, customers' reviews have singled out a few dishes by name: the penne Boscaiola, the haggis lasagne and the tagliatelle Marinara. If you're new to us, any of them is a good place to start.

Build your own

Prefer to decide everything yourself? Every pasta dish on our menu takes add-ons: cheeses, meats, seafood, vegetables and seasonings, or a splash of white wine. Start from one of the simple sauces, such as the Arrabbiata, Bolognese, Imperiale or Al Creama, and build from there. Not in a pasta mood?

Allergies

Our standard pasta is made from wheat, the tagliatelle usually contains egg, and many sauces contain milk. Dishes with white wine contain sulphites, and the prawn and mussel dishes contain crustaceans and molluscs. Every dish is listed on our allergens page; please tell us about any allergy before you order.

Pasta questions

Which pasta can I choose?

Penne or spaghetti with most dishes, or tagliatelle for a small extra charge. Gluten-free penne can be swapped in too; please read the note on it above first.

Which pasta dishes are spicy?

Anything built on arrabbiata has a little chilli, including the Imperiale dishes. The Diavola ("She Devil") is hot on purpose, with chilli flakes and jalapeños. The creamy dishes, such as the Carbonara, Boscaiola and Campagnola, have no chilli in their descriptions.

Is the lasagne homemade?

Yes. Both the lasagne and the haggis lasagne are made in our kitchen, layered with Bolognese and béchamel and topped with cheddar.

Can I build my own pasta?

Yes. Start from a simple sauce such as the Arrabbiata or Al Creama, choose your pasta, then add what you like: every pasta dish takes the same add-ons.
